Il existe quatre modes d\u2019utilisation des brins de safran :<\/p>\n<h2>Directement:<\/h2>\n<p>Utiliser les brins sans traitement pr\u00e9alable dans les plats n\u00e9cessitant un long temps de cuisson, ce qui laisse au safran le temps de lib\u00e9rer sa couleur, son ar\u00f4me et sa saveur.<\/p>\n<h2>Infusion:<\/h2>\n<p>S\u2019utilise au pr\u00e9alable des pr\u00e9parations \u00ab rapides \u00bb. D\u00e9posez pour cela le nombre n\u00e9cessaire de brins dans un petit r\u00e9cipient et versez-y un peu d\u2019eau chaude (non bouillante !). Aplatissez les brins en les pressant avec le dos d\u2019une cuill\u00e8re \u00e0 caf\u00e9 contre la paroi du r\u00e9cipient et laissez-les ensuite infuser pendant 10 \u00e0 15 minutes (le liquide est alors pr\u00eat \u00e0 l\u2019usage). L\u2019infusion est souvent faite dans une partie du liquide entrant ensuite dans la composition du plat (eau, vin, vinaigre, lait, cr\u00e8me, jus de fruit)<\/p>\n<h2>Rissol\u00e9:<\/h2>\n<p>Au d\u00e9but d\u2019une pr\u00e9paration, faites bri\u00e8vement revenir les brins de safran dans un peu de beurre ou d\u2019huile, ou ajoutez-les pendant la cuisson \u00e0 la mati\u00e8re grasse afin celle-ci s\u2019impr\u00e8gne de la saveur et que le parfum et l\u2019ar\u00f4me de l\u2019\u00e9pice puissent bien se d\u00e9velopper. Ce mode de pr\u00e9paration est fr\u00e9quent dans les plats dont les ingr\u00e9dients ont d\u00e9j\u00e0 une saveur soutenue.<\/p>\n<h2>Grill\u00e9:<\/h2>\n<p>Faites griller les brins jusqu\u2019\u00e0 les rendre cassants, dans une po\u00eale \u00e9paisse (sans mati\u00e8re grasse) ou dans un four \u00e0 chaleur moyenne, ou emballez les brins dans du papier aluminium que vous poserez sur le couvercle d\u2019une casserole dont le contenu est en \u00e9bullition.
